How is it already May? Admittedly the days have been blurring together since the stay at home order. The rainy weather also made the differentiation of time less obvious this past week. However, this weekend was full of mostly sunshine and the opportunity to relax. This week will be filled with the usual work days but I am hoping to carve a little extra time each day to recharge.

This week there are only three simple things because I didn’t want to force another two items. I plan on returning to the usual five next week! Thank you for understanding.

1. Smoothies. Not having to factor in my commute each morning has opened my options for breakfast. This past week I made smoothies with fruit we had on hand- frozen peaches, fresh pineapple, and bananas. I threw in shredded coconut and I felt that I was sipping a tropical escape! I loved switching up the texture and flavors of breakfast.

2. Lake Pajamas. Please hear me out before you immediately write off pajamas that cost more than $20. Mama Bear gifted me pair of Lake Pajamas this past Christmas after I alerted her of their Black Friday Sale. I too initially scoffed at the price and instructions to hang dry because seriously they are pajamas. However, they are beyond luxurious. Considering that you sleep for an average of 6-8 hours, sleepwear is important! I love the quality of the fabric and the overall fit. They truly are the only pajamas that I could see myself committing to wear.

Full Disclosure: I still have an overflowing pajama drawer and have not broken down and organized my clothing.

3. Corn Cookies. Yes- corn cookies. The recipe is from Momofuku Milk Bar: A Cookbook and they are delicious. They do require some non-staple ingredients like freeze dried corn and corn flour. My friend graciously mailed me the exact amount of those two ingredients and we FaceTimed today to make them together. It was the extra nudge and ounce of confidence that I needed to finally make make corn cookies.
